  Chocolate Chip Cookies
 

1 stick of unsalted butter
3/4 cup packed dark brown sugar
3/4 cup sugar
2 large eggs
1 teaspoon pure vanilla extract
1 (12-oz) bag semisweet chocolate chips, or chunks
2 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1 teaspoon fine salt

Steps:

 
  1. Evenly position 2 racks in the middle of the oven and preheat to 375 degrees F
  2. Line 2 baking sheets with parchment paper or silicone sheets. (If you only have one baking sheet, let it cool completely between batches.)
  3. Put the butter in a microwave safe bowl, cover and microwave on medium power until melted. (Alternatively melt in a small saucepan.) Cool slightly.
  4. Whisk the sugars, eggs, butter and vanilla in a large bowl until smooth.
  5. Whisk the flour, baking soda and salt in another bowl.
  6. Stir the dry ingredients into the wet ingredients with a wooden spoon; take care not to over mix.
  7. Stir in the chocolate chips or chunks.
  8. Scoop heaped tablespoons of the dough onto the prepared pans. Wet hands slightly and roll the dough into balls.
  9. Space the cookies about 2-inches apart on the pans.
  10. Bake, until golden, but still soft in the center, 12 to 16 minutes, depending on how chewy or crunchy you like your cookies.
  11. Transfer hot cookies with a spatula to a rack to cool.

  Chocolate, Chocolate Chip Cookies
 

2 1/4 cups flour
1 teaspoon salt
1 teaspoon baking soda
2 sticks butter, softened
1 cup granulated sugar
1 cup packed brown sugar
2 large eggs, beaten
1 tablespoon vanilla
1/2 cup unsweetened cocoa
3 cups chocolate chips

Steps:

  1. Preheat oven to 375 degrees.
  2. In a bowl stir together flour, salt, and baking soda.
  3. In another large bowl stir together butter, both sugars, eggs, vanilla and cocoa.
  4. Gradually stir flour mixture into butter mixture and mix until combined.
  5. Stir in chocolate chips
  6. Drop dough by tablespoonfuls onto greased baking sheets and bake for about 10 minutes.
  7. Cool on a baking rack.
  8. Enjoy!
 
  Oatmeal Raisin Cookies
 

2 sticks unsalted butter
3/4 cups white sugar
3/4 brown sugar
2 eggs
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon baking soda
2 cups oatmeal
1 teaspoon hot water
1 cup raisins
2 teaspoon vanilla extract

Steps:

 
  1. Preheat oven to 350 degrees F.
  2. Butter a cookie sheet.
  3. Add the butter and sugars into a mixing bowl and cream with a mixer
  4. Add the eggs and mix well.
  5. With a large spoon mix in the flour, salt, cinnamon, baking soda, and the oatmeal, mix well.
  6. Add the water, raisins, and vanilla.
  7. Flour a workspace and with your hands make a "snake" with the dough and cut it into several pieces.
  8. Place on the prepared cookie sheet.
  9. Bake for 10 to 15 minutes (depending on how thick your snakes are).
  10. Cool on a baking rack.
  11. Enjoy!
